White Chili
(thanks to the wonderful Linda Slater)
4 chicken breasts baked or boiled/cut into pieces and Sauteed (or 2to 3 cans)
1 1/2tsp. garlic
1 tbls. Olive Oil
1 med onion chopped
2 cans great white beans (northern) drained and rinsed
2 small cans chopped Green onions
1 tsp. cumin
1 tsp. oregano
1 tsp. salt
1/2 tsp. white pepper
14 oz. can chicken broth
1 cup sour cream (put in Last!)
1/2 cup whipping cream-( put in last!)
May also add white or yellow corn /drained
Fry onions in Olive oil. Add chicken and other ingredients. Use only 1/2 chicken broth to if it is too thick or thin.
Add creams last just to heat them through (so they wont curdle)
ENJOY!
I made this recipe for bunco the other night and it was a hit. You cant really mess up this recipe. I was in such a Rush I put in the whole chicken broth and accidentally put in a whole cup of whipping cream and it turned out great.

Thanks Jess! This dish was fantastic!!! I'm actually making it tonight for dinner. It's a perfect cold day meal. I think I might put the extra chicken broth and whipping cream in on purpose because it tasted awesome!

Okay - so I was searching for something to make for dinner last night - and I luckily had all the ingredients for this. It was awesome and Nathan even ate it! - that is a true compliment. Since he will eat it, it is going into my regular meal cycle.
